What You’ll Need:
- 1 Larderfresh Brown Rice, Mushroom & Seaweed Burger
- ½ block firm tofu, cubed
- ½ cup cooked brown rice
- ½ cup steamed edamame
- ¼ cup shredded carrot
- ¼ cup thinly sliced cucumber
- 1 tablespoon soy sauce or tamari
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds
- Optional: a small side container of sweet chili or teriyaki sauce for dipping
How to Prepare:
- Cook the Burger
Warm the Mushroom & Seaweed Burger in a non-stick pan or oven as per instructions on the packet. Once cooled slightly, cut it into bite-sized pieces.
- Prepare the Tofu
Sear the cubed tofu in a pan with sesame oil until lightly browned. Add a splash of soy sauce or tamari for extra flavor.
- Assemble the Bowl
Layer the brown rice in a lunch container as the base. Arrange the tofu, burger pieces, edamame, shredded carrot, and cucumber on top.
- Finishing Touch
